Green plum, known as maesil in Korea, is a traditional East Asian fruit used in sweet-tart concentrates and cooking.

A fruit with a culinary history

Korean households preserve the fruit in syrup and use it throughout the year. The concentrate can become a drink, a marinade or a flavoring for dishes; the same fruit connects Korea, Japan and China through different food traditions.

Six ways to serve it

Stir 2–3 tablespoons KOTSAM green plum concentrate into hot, cold or sparkling water. Add ice, lemon or mint to taste. Try sparkling water with lemon and mint; warm water with chamomile or rosemary; hot water with ginger and cinnamon; milk or soy drink with ice; or black tea with ice and lemon.

Beyond the glass

Its sweet-tart flavor also suits dressings and marinades. Adjust the amount to suit the dish or drink and follow the label for storage.
